Chinese Cocktail Bun - 鸡尾饱
Makes 32 small sized buns or 16 large sized buns
Dough:
1. 1/3 cup sugar 1 cup milk
1/3 tsp salt ¼ cup softened butter
- cook until luke warm
2. 2 ½ cups flour 1 tbsp yeast
- mix together
3. mix step 1 and 2 together in a large bowl, add one beaten egg and knead.
4. add 1 to 1 ½ cup of flour
- knead until smooth and elastic..
- place in lightly greased bowl, turning once to coat surface.
- Warm oven to 70 C or 150 F, when the oven is warm, turn it off
and place the covered dough into the oven for one hour to rise.
Filling: ¼ cup softened butter ½ cup flour
½ cup sugar 1 cup fine coconut
½ cup skimmed milk powder
- mix together
5.after one hour, take the dough out. punch down.
- divide dough in half and cut each half into 8 or 16 equal pieces and form into buns.
- flatten each bun with a rolling pin, place the filling inside.
- close the bun and place it on a greased baking sheet.
6.warm oven to 70 C or 150 F, when the oven is warm, turn it off.cover the buns.
- place the baking sheet in the oven for one more hour to rise
7. after one hour, remove the baking sheet.
(optional) beat one egg
- brush the egg onto each bun to create a glossy effect
- sprinkle sesame seeds
8. Bake at 375 F for 10 minutes.
